This salsa is based on my go-to red salsa recipe, with the addition of smoky chipotle peppers. Chipotle peppers are vine-ripened jalapeños that are smoked and dried, so they offer great depth of flavor. For this recipe, we’ll use chipotle peppers in adobo sauce, so they’re ready to blend into the salsa.
This chipotle salsa requires only seven basic ingredients, and the end result tastes so fresh. You’ll need canned tomatoes, onion and garlic, fresh cilantro, jalapeño and chipotle peppers, and fresh lime.

Chipotle Salsa Tips
To save some time, just roughly chop the garlic and onion. We’ll use the food processor to chop them more finely. I love shortcuts that work!
Fire-roasted tomatoes offer greater depth of flavor than regular canned tomatoes, but not all brands taste good. Muir Glen’s fire-roasted tomatoes never disappoint. We’ll drain off a portion of the tomato juices before adding the tomatoes to the food processor, which prevents the salsa from being too watery.
You’ll find canned or jarred chipotle peppers in adobo sauce in the international aisle of well-stocked grocery stores. To store leftover peppers, transfer the peppers and some of the adobo sauce to a small freezer bag. Squeeze out the air, seal it fully, and flatten the peppers in the bag. Place the bag flat in the freezer and store for up to 6 months. Whenever you need chipotle peppers, simply tear off what you need.
This salsa is inherently a little spicy, and you can make it extra spicy if you’d like. You could omit the jalapeño altogether to make it closer to mild. Since each pepper varies in its spicy level, start with the lower recommended amount of fresh jalapeño and chipotle pepper, then taste and add more chipotle if desired.

1 can (15 ounces) diced fire-roasted tomatoes*
1 clove garlic, roughly chopped
½ cup roughly chopped white onion (about ½ small onion)
¼ cup lightly packed fresh cilantro leaves
½ medium jalapeño, seeds and ribs removed, and roughly chopped
1 to 3 chipotle peppers in adobo sauce
1 tablespoon lime juice, more if needed
½ teaspoon fine salt
Instructions
Drain off about half of the tomato juice from the can (about ⅓ cup) and discard it.
In a food processor, pulse the garlic to chop it more finely. Add the tomatoes and all of the remaining juice from the can. Add the onion, cilantro, jalapeño, 1 chipotle pepper, lime juice, and salt.
Process the mixture until it is mostly smooth and no big chunks of tomato or onion remain, scraping down the sides as necessary. Taste, and add another chipotle pepper or 2 if you prefer spicier salsa. Season to taste with additional lime juice and salt, if necessary.
Serve the salsa immediately or store it for later. This salsa keeps well in the refrigerator, covered, for about 10 days.

*Tomato notes: I like Muir Glen brand fire-roasted tomatoes for reliably great flavor. You can use regular diced tomatoes, but your salsa won’t have the same depth of flavor.

Preparing the Dough
Preheat Oven, Prepare Pan: Preheat the oven to 400 degrees Fahrenheit and then line a baking sheet with parchment paper. Set aside.
Mix Dry Ingredients: Then in a large bowl, whisk together the flour, sugar, cocoa powder, espresso powder, baking powder, and salt.
Grate Butter: Use a box grater to grate the cold butter into the dry ingredients. Then use your hands to lightly toss the butter in the flour mixture.
Mix Wet Ingredients, Combine: In a medium bowl, combine the cream, egg, and vanilla. Pour over the flour mixture. Gently stir until combined, using a rubber spatula to press the dough together.
Shape: Turn the dough out onto a lightly floured surface and then work together into a ball. Try to work the dough as gently and as little as possible, going only just until you can bring it all together into a ball.
Cut: Flatten the ball of dough into an 8-9 inch disc. Then use a sharp knife to cut the disc into 6-8 equal slices.
Baking and Making the Chocolate Ganache
Add to Pan: Arrange the pieces on the parchment-lined baking sheet, leaving about 2 inches between each one. I recommend chilling them in the freezer for 15 minutes before baking to allow the butter to chill after being worked, but you may also bake them straight away.
Bake: Bake for 18-20 minutes, until the edges are set. Then allow the chocolate scones to cool for 25-30 minutes before adding the ganache drizzle.
Prepare Ganache: For the ganache, heat the cream in the microwave for 25 seconds. Then add the chocolate chips to a small bowl and pour the hot cream over them. Let it sit for 1 minute before carefully stirring until smooth.

Here are a few extra tips to keep in mind so you end up with bakery-worthy chocolate scones!
Chill Your Ingredients: It’s important that your ingredients are chilled and cold when you bake. Because, if your butter melts too soon while it’s baking then you won’t get that soft and tender crumb. This is also why it is recommended to chill the scones before baking. If you choose to skip the chilling step, the scones may not rise as tall.
Don’t Overmix: You don’t want to overwork your dough. Make sure that everything is thoroughly combined and then leave it alone. It will make your scones be dense and tough, not soft and flakey.

It’s one of our favorite things about Chicago and is the ultimate comfort food. Trust me, this recipe does not disappoint! It’s loaded with thick, flaky layers of crust and topped with gooey cheese and marinara. It is the BEST deep dish pizza you will ever have! And the best part is? No trip to Chicago required!
I adapted the crust recipe from America’s Test Kitchen. For the crust we use a technique referred to as laminating the dough. This is where the pizza dough is rolled out then softened butter is spread on top of the dough. Then you roll it out again. It’s similar to the method for making croissants and is what gives the dough its delicious flakiness. So, let’s get into everything you’ll need to put this tasty Chicago-style pizza together.
Pizza Dough Ingredients
The most tender and flaky crust made from super simple ingredients!
Warm Water: Adds the necessary moisture to activate the yeast and create the dough.
Honey: Adds sweetness to the dough and also helps activate the yeast for rising.
Instant Yeast: Leavens the dough, causing it to rise and create a light, airy crust.
Unsalted Butter: Makes the dough nice and tender!
All-Purpose Flour: Forms the base of the dough, providing structure.
Cornmeal: Adds a crunchy texture to the crust and prevents sticking to the pan.
Salt: So the crust doesn’t taste bland.
Olive Oil: Coats the pans to prevent sticking and also adds a subtle olive flavor to the crust.
Easy Homemade Tomato Sauce
This deep dish pizza is then topped with an easy homemade marinara sauce. I make the sauce and let it simmer while I am letting the dough rise.
Marinara Sauce: Serves as the pizza sauce, adding flavor and moisture to the toppings. You can use your favorite jarred sauce or (my personal recommendation) make some from scratch!
Mozzarella cheese: Melts and creates a gooey, creamy layer over the sauce and toppings.
Parmesan Cheese: Adds a salty, nutty flavor to the pizza.
Green Bell Pepper: So your pizza has some flavor and texture!
Mushrooms: For some earthy, savory flavor.
Pepperoni: Adds a spicy and salty taste, a classic pizza topping.
Sausage: More savory, meaty goodness!
Fresh Basil: Garnishes the deep dish pizza with a fresh, aromatic touch.
Salt and Pepper: Seasonings that enhance the overall taste of the pizza. Adjust to taste.
Add water, honey, and instant yeast to the bowl of a stand mixer. briefly whisk to combine and allow the yeast to bubble up, about 5 minutes.
Add in the butter, 1 1/4 cups of flour, cornmeal, and salt. Mix on low speed to bring everything together. the dough should begin to pull away from the sides of the mixer, if it is still really sticky, add more flour in 1/4 cup at a time.
Increase the speed to medium and knead the dough until it pulls aways from the sides of the bowl, 5 minutes.
Coat a large bowl with olive oil and add the dough ball to the bowl turning to coat the dough ball in oil. Cover with plastic wrap and allow the dough to rise until doubled, about an hour.
Assemble / Bake:
Prepare large springform pan by lightly oiling it with olive oil. Preheat the oven to 400 degrees fahrenheit.
Transfer the dough ball on a lightly floured work surface and roll into round that will fit a large spring form pan, or round pan. Transfer it to the prepared pan. Lightly press dough into pan and push dough up the sides about 1 inch.
Sprinkle half of the mozzarella cheese on the dough. Spread the pizza sauce over the dough. Sprinkle the parmesan and remaining mozzarella cheeses evenly across the top of the sauce. Evenly distribute the toppings across the top of the pizza.
Bake for 25-30 minutes or until the crust is golden brown.
Allow pizza to rest for 10 minutes before removing from pan and slicing.
You can customize this pizza by adding any toppings you want! The few I listed are just a general guide. If you want to skip making your own dough, store bought works just as well, just make sure it is enough dough to fill your baking dish. I suggest using my homemade marinara sauce, but you can use any sauce you prefer! Store any leftovers in the fridge in an airtight container for up to 5 days.
